No one ever told me buying a house would be easy, but no one ever told me buying a house would be quite this stressful either. Along the way I misplaces my camera cord, my grandpa turned 91 and Colorado is on fire. Hence the long time away. Oh and I’m leaving on Monday to drive across the country and start grad school. Did I miss anything?

  It is hot and sunny here today, it feels more like July. It is truly summer, and for the first time in months, make it 10 month, I really truly feel like myself again. A real person. Imagine that.

  I have been cleaning out my life, simplifying and getting ready to start my masters. And then I stumbled upon this. A blog named Clean. How perfect could it be. Sure she has two kids and her own company and I can barely take care of my husband and myself, but it made me so happy to see. So happy indeed that I have spent way too much time reading her blog, making almond milk, and wondering why I hadn't found it years ago.

spring cleaning

This year has been one of the hardest of my life, and because it is spring it is time to clean out all the unwanted things in my life. I have never been good at new years plans but I am going to give myself a challenge: 30 days to make three changes. 1. stop eating wheat, 2. go to yoga at least three times a week and ride my bike the other days and 3. go through all of the stuff I have and clean it out (that means cloths, craft stuff, books...). It always amazes me that one person can hold on to so much stuff, and before we move into the new house I would like to leave all the unwonted stuff behind me. I had a friend who would only have 6 of the same items of clothing, 6 shirts, pants, shorts, and when she wanted something new she would have to give away one of the things she owned. Do you have a rule about stuff?

spring is in the air

Spring is in full fledge and it is looking more like summer each day. The school year is finished and I have a few weeks of nothingness. Time for the garden, yoga, baking, ridding bikes, sleeping in, reading, ice cream…
 Speaking of ice cream, I wanted to find a way to make coconut ice cream that was rich and creamy and not at all watery. So I tried all sorts of things and finally settled for egg yolks. It made a yummy custard thickness that we all started eating with spoons before the ice cream maker even finished its job. To add a little something I grated some fresh ginger into the mix.  If you can use whole fat organic milk, it tastes so much better.

Here is my recipe:

Ingredients:
3 cups coconut milk
1/2 cup sugar
1 dash salt
2 egg yolks, lightly beaten
2 teaspoons vanilla extract

Directions:

1. Place 1 cup coconut milk in a small pan and heat over low heat until bubbles form, and milk becomes hot; add sugar and salt, stirring to dissolve.
2. Remove from heat and add 1-2 tbsp of the hot milk to the egg yolks, mixing well; add more milk to eggs and bring it up to temperature.
3. Pour egg mixture back into pan and continue to cook over low heat, stirring constantly, until it starts to thicken.
4. Place the pan in a sink or basin full of ice water to cool down, continuing to stir.
5. When custard is just barely warm, stir in the rest of the coconut milk and vanilla.
6. Refrigerate mixture until ready to use.
7. Pour strainer into the ice cream maker and let the magic begin!
